The Lion City’s Michelin Guide list also embraces five freshly minted one-star establishments

Singapore’s culinary landscape was shaken up on 25 July 2018 at the reveal of this year’s Michelin Guide Singapore’s selection of one-star and two-star restaurants. Held at Resorts World Sentosa, the third edition of the prestigious, highly-anticipated event marked significant milestones for many food connoisseurs, and new, thrilling beginnings for five particular restaurants.

The five newly awarded one-star establishments are Cantonese restaurant Jiang-Nan Chun at Four Seasons Hotel Singapore; Nouri, offering a decadent mix of international fare; French Gastrobar Ma Cuisine; Burnt Ends and Japanese restaurant Sushi Kimura.

Will this first victory spur any change in any of our new one-starred restaurants? Chef of Ma Cuisine Mathieu Escoffier comments, “No, we’re not going to change anything for now. Our prices will be the same. We’ll continue to follow our passion and focus on getting better, such as offering the best wines to our guests.”

This year’s selection of two-star restaurants — Les Amis, Odette, Shisen Hanten, Shoukouwa and Waku Ghin — remains the same as last year’s, but of course, no longer includes the now-defunct Andre and L’Atelier de Joel Robuchon.

The closure of Joel Robuchon also leaves an empty spot for the grandest award of the evening: three Michelin stars. This, undeniably, raises a whole lot of questions on the standards of Singapore’s culinary scene this year. Chef Julien Royer from Odette chooses to remain optimistic, saying, “If the Michelin Guide decides that there’ll be no three-star winner, we’ll just have to live with that. It’s sad for Singapore, but I really hope we’ll see a winner next year.”
