Group executive chef Joseph Sergentakis presents a new menu that includes a not-to-be-missed dessert platter

Not content with being just known for its amazing views (and cocktails) on level 57 of Marina Bay Sands hotel, fine dining restaurant Ce La Vi conducted a dramatic makeover last year that featured with raw stones, natural woods and dark marbles. Its group executive chef Joseph Sergentakis spearheaded the revamp with a new menu too, showcasing his flair for fusing East and West, serving dishes that were inspired by his previous stints with Michelin-starred chef Daniel Boulud and Mr and Mrs Fox. Well, time certainly flies, and you’re reminded when Sergentakis once again, proudly unveils yet another new menu.

The new ala carte menu is divided into four sections: Sushi and sashimi, Starters, Mains and Desserts. Don’t turn your nose up just yet, the chef has once again managed to marry the best of Southeast Asian cuisine with Western techniques.

Take for example the King Salmon Tataki starter, where slices of salmon are seared and served with a tangy jalapeno dressing. Crispy taro root is thrown in for an added crunch, while smoked ikura provides that additional burst of flavour. Or Roasted Ocean Gems Tiger Prawns in Coconut Green Curry, that’s best had with a bowl of rice. Sounds like a typical Thai dish, but as anyone who’s tried making it can tell you, it’s easy to pull off, but tricky to perfect, and Sergentakis has mastered it in this aspect.

Both signature and shared mains are largely left untouched from the previous menu, but if you’re dining with a large group, give the latter section a browse online, for those dishes are only available for pre-order, with a 24-hr advance notice required.

What we’re most excited about is the new dessert platter, where a selection of desserts come in three varying sizes (from $32). The lavish dessert platter includes a Mango Lassi Cotton Cheesecake, a chocolate dessert and fresh fruit, the perfect end to a heavy meal. Instagram addicts, you’d want to whip out your phones for this. The platter arrives with much fanfare: A Tiki-cup filled with dry ice lends an air of mystery as it’s presented.
