Michelin-starred chef Richard van Oostenbrugge will open Table65 at Resorts World Sentosa in Singapore at the end of this year

The European restaurant on Sentosa Island will be helmed by chef Richard van Oostenbrugge, a prominent figure in Netherland’s culinary scene

Come December, Table65 (named after Singapore’s country code), a new celebrity chef fine-dining restaurant at Resorts World Sentosa will join the city’s culinary arena. But before you dismiss the newcomer as just another typical fancy dining establishment, you ought to know that the show runs quite differently here.

Putting The Fun In Fine Dining

Gone are the traditional formalities of fine-dining – private dining spaces are substituted with a laidback communal concept. Diners can also enjoy a full view of culinary theatrics, as chefs will prepare their meals in front of them, ensuring spontaneous interaction between the culinary team and diners.

The menu at Table65 will showcase contemporary European fare, bridging the use of local produce with chef van Oosternbrugge’s culinary acumen in the pairing of ingredients. A signature dish not to be missed is the Os a Moelle’ veal tartare with smoked herring, bone marrow and cockles.

Other must-tries include barbecued chicken skin with smoked eel cream and local vegetables; oyster with hazelnut, briny veloute, braised cabbage and salted lemon pearl; couscous of basmati rice with Pierre Robert cheese and pistachio oil; and langoustine poached in duck fat with dashi albufera sauce topped with freshly grated coffee beans.

The signature palate cleanser here takes the form of apple with salted caramel and walnut — a creation that draws inspiration from chef van Oosternbrugge’s famous Green Apple dessert from Bord’eau, which sees a green apple sorbet encased in a transparent sugar glass bubble sitting on a round puff pastry base.

Table65 at Resorts World Sentosa is set to open on December 2018.
