Enjoy a taste of Esquina at 67 Pall Mall Singapore’s Resident Chef Series

At the 67 Resident Chef Series, expect cheesy Tarte Toasties, Fideuà and Spanish Suckling Pig to go along with 67 Pall Mall Singapore’s 6,000 wines

What’s the story?

If you love good food and wine in the company of like-minded folk, perhaps it is time to join 67 Pall Mall Singapore. The private members’ club, located in a swanky 1,394-square-metre penthouse at Shaw Centre, is home to 6,000 wines—the biggest and most diverse wine list in Southeast Asia. Curated by a 15-strong sommelier team, the list is ever changing and ready to please, with at least 1,000 available by the glass and rare and iconic gems to explore.

Of course, fine wine must come with fine food, and to keep things interesting, the 67 Resident Chef Series has been in play. Launched in 2023 as a way to champion locally based talent, the series has since featured Jeremy Gillon (Restaurant Jag), François Mermilliod (Bar-A-Thym), Damian D’Silva (Rempapa) and until the end of June, Carlos Montobbio (Esquina).

What should we know about the chef?

The Barcelona-born chef-owner of Esquina has two decades of experience under his belt, with time spent at Michelin-starred restaurants like El Celler de Can Roca, Zuberoa and Cinc Sentits. You will find his approach to food driven by a curiosity for new flavours and techniques, combined with his Catalan heritage and culinary memories.

What’s on the menu?

To name a few, Esquina’s 67 Tarte Toasties, topped with Ibérico ham, Brie and truffle duxelles; Fideuà de Calamares, a short noodle paella fried with cuttlefish and saffron aioli; and best of all, a Spanish Suckling Pig, served with apple and rhubarb chutney and mulled wine jus. The menu will be updated in June, so be sure to return for more.

Apart from the 67 Resident Chef Series menu, one can also order from the regular menu, which includes classics like Scotch Egg, Beef Wellington, Stick Date Pudding and plenty more.

What else is there to know?

Fun things are always going on at 67 Pall Mall Singapore. There is live music on Fridays, Saturdays and eve of public holidays, frequent bar takeovers and masterclasses. This month, members can look forward to a whisky masterclass (18 May) by Rachel Barrie, the master blender of The GlenDronach, Benriach and Glenglassaugh; the 67 Night Brunch (18 May), Singapore’s first after-dark brunch filled with free-flowing wines and bubblies and Afro-Latin beats by DJ Candice B; and a champagne masterclass by Joseph Perrier (24 May).
