Tune in to the live music at Madame Fan, our favourite Chinese restaurant in town

Madame Fan isn’t your typical Cantonese restaurant. In the evenings, the restaurant is abuzz with chatter over dining tables and a string of jazz numbers led by various musicians. The dynamic here is upbeat and sexy, void of rigid European dining standards that the city’s high-end restaurants are guilty for – all without putting food and service at the back seat, of course. At least that’s what the man behind the restaurant, Alan Yau, has been striving for.

But something else is brewing at the 222-seat restaurant that sits within The NCO Club along Beach Road. Come November, guests can tuck into three new degustation set menus (from $168++ per person) that offer a refined, modern take on traditional Cantonese fare. Dishes include the Pan-fried Scallop with Sea Urchin and Grapes Salad, Braised Turbot fish with Wild Mushroom and Black Truffle, and the XO Octopus Ink Fried Rice with Wagyu Beef and Fried Hokkaido Scallop.

Come for the food, and stay for the booze and tunes. An impressive list of curated wines and bubblies awaits, in addition to tipples concocted by head mixologist Davide Boncimino. The restaurant recently inducted a live entertainment and dinner programme, with a music roster comprising a collective of esteemed musicians – Imelda Teo, Skye Sirena, Dawn Wong, Lou Peixin and Karen Xavier – performing every Thursday, Friday and Saturday from 7.30pm to 10.30pm. Jive the night away with a medley of vintage-style reworks of pop, jazz, swing and doo-wop hits.
