Back in the day, we never ate much with Champagne beyond caviar, canapés or nothing at all. But what used to be reserved for celebrations and occasions has become something to be enjoyed every day, whether it’s at brunch or over some fried chicken. And when time calls for a fancy night out with some bubbly, do yourself a favour and book a spot at 28 Wilkie. The one-Michelin-starred restaurant, led by the young and unassuming Seth Lai, dresses Japanese produce in modern European elegance, and is currently offering a dedicated Dom Pérignon dinner, right until 13 June 2023.
For S$468, you’ll get to experience the best of spring and delicate flavours of Dom Pérignon Vintage 2013. This vintage marks the maker’s return to a glorious past of late harvest wines, in a year of extreme temperatures, which only means a crisp freshness with a sense of finesse and restraint, and notes of stone fruit, tangerine oil and buttered toast.
It also serves as inspiration for Lai, whose menu will take you through the five facets of the vintage. The intensity one might encounter is represented with a buttery cauliflower mash, uni and caviar, while the complexity of the wine is spoken for in the form of spring lamb, served with chutney, tamarind and kale. As for the tactile sensation 2013 produces, there is the risotto, perfectly al dente and gussied up with Almafi lemon, firefly squid and speck. The 2010 and 2012 vintages will be present, too, so you get the full Dom Pérignon experience—for the night, at least.
