The lowdown
Binomio has reappeared at Raffles Hotel with a quiet confidence (and just the right amount of flair). Its name, which means “to pair” in Spanish, shows us how the restaurant offers the best of both worlds; still effortlessly split between a casual alfresco tapas bar and fine-dining restaurant, the Spanish institution now occupies a grander stage, accented with brass, cobalt blues, and golden flourishes by acclaimed Sevillian artist Fernando Oriol.
Step inside, and you’ll notice a new layer of polish. There’s the open kitchen humming with energy, and soft lighting that flatters both dish and diner. And right in the centre of it all: a sumptuous private dining room lined with wine and wrapped in glass, which seats up to eight comfortably. It’s the kind of space made for celebrations—a discreet anniversary, perhaps, or a long-overdue reunion of friends over sherry and lobster.
Outside, things are a little more playful. Love people watching? Coachloads of tourists arrive for the obligatory Singapore Sling at Raffles Hotel day in and day out, but the real action is at Binomio’s breezy bar, where well-dressed locals nibble on croquetas with cocktails and cava in hand.


The food
Led by Executive Chef Félix Noguera (who hails from Nobu London and Cipriani Miami), Binomio’s new menu is a clear step up, but never fussy in the least. It’s rooted in tradition, elevated by technique, and finished with a flick of bold, modern flair.
Here’s what we suggest: start with the trio de croquetas, each crisp and béchamel-soft: cod, mushroom, truffle, and our favourite, the namesake Binomio croqueta, made from chicken thigh and 60-month aged Ibérico ham. The ensaladilla de gambas y encurtidos, a creamy, tangy prawn and potato salad speckled with pickles, should be up next. It’s just as good spooned on its own as it is scooped up with bread.
For mains, the fideua de pato is a soulful highlight: angel hair noodles cooked paella-style in a massive pan, paired with seared duck breast and dollops of aioli. It’s rustic, rich, and made for sharing.

But the sleeper hit—the dish you’ll text your friends about—is the dessert. The tarta de queso clasica, Binomio’s take on Basque cheesecake, may just convert those who typically turn their nose up at the genre. Light, lush, and deeply caramelised, it’s a final note that lingers long after the last forkful.
The rest
The drinks menu is playful but grown-up, balancing Spanish sherries and cava with mocktails like the Peach Mule, a frothy, floral sip built on peach syrup, lemon, apple juice, and egg white. If you’re feeling indulgent, opt for the Orchid Smash: apple brandy, honey syrup, lemon purée and just a touch of yoghurt for a creamy tang.
Binomio’s move to Raffles may be a relocation, but it feels more like a renaissance. There’s history here, and now, a new elegance—one that rewards a leisurely lunch, an impromptu date night, or simply the joy of a well-poured glass of cava at golden hour.
